Our trip to Sicily will be over liberation day, April 25, does everything close? Do we need to plan for that?

Consider as being an extra Sunday. As there are two close holidays, April 25th and May 1st, a lot of people will plan an extended weekend, so usually that is one of the most busy weeks in the year.
It's the Italian 4th of July, without the fireworks and the BBQ.
May 1st is the Italian equivalent of the first Monday in Sept. in the US (Labor Day)
Restaurants will be open.
Museums will be for the most part open (but check the individual museums' websites).
Many small shops close, larger stores and stores in tourist areas will be following a Sunday's schedule (may be open, but with limited hours).
Lots of people take off that time, so make sure your hotel accommodations are booked in advance, especially in popular destinations, like Taormina.
