I will be arriving early October at Rome Fiumicino Airport. Can I bypass ticket machine and "Tap and Go' at the 'Leonardo Express Gate"?

Yes. But one card per person (I think). I don’t think you can purchase for two people with the same card.

I just used the Trenitalia app on my phone when I was near the train gate. Just scan the QR code to open the turnstile. Very easy & no waiting in any lines.

Yes tap and go is the easiest way but it is just one per card.

To clarify Roberto and Linda, you're saying one card per person or one per person. Do you mean to say one tap per person or are you saying to first buy a card, then tap?
