Any great recommendations for off-the-beaten path restaurants (moderate), places, stores, music?!
And for Galipoli (stopping on our way back to Monopoli)
I read that the Castello di Lecce has paper mache sculptures...if that is still current.

Osteria Brigante in Gallipoli is outstanding.
There are too many restaurants to mention in Lecce; everywhere we went was very good. Make sure to see the Roman amphitheater there, but avoid the businesses immediately surrounding it.
I went to Ristorante Tranquillo on Piazza Sant'Oronzo this past summer, right next to the Amphitheater and it was great.
I do not remember Gallipoli as being on the way from Lecce to Monopoli...

Gallipoli is not on the way from Lecce to Monopoli.
Gallipoli is further down on the Ionian coast to the south from Lecce, while Monopoli is on the opposite direction, northwest of Lecce.
