Hello, I am taking the Best of Italy in 17 days tour in Early June. I love Italian food and would like to take a pasta making class while on this tour. Has anyone ever done this and in which city? I remember that we are making Pesto in Cinque Terre, but I need to know how to make pasta to go with it. Since I have been to Rome and Florence a number of times, I should have free time while there to try something new. Thank you for any recommendation.
I just posted for the same topic. I have heard, 'Once in Rome' for pasta making but have no real info. Let me know if your find out something good. I also have some time in Rome.
Pasta is easy. It would be more fun to take a class, but if that doesn't work out, you can learn on YouTube. Just be sure to let it rest for 30 minutes before you roll it out.
In case it doesn't work out, check out New York Times (NYT) cooking section and Melissa Clarke...she has excellent videos on making pasta. Here are a couple. You can find many others just via Googling "Melissa Clarke and pasta":

Here is one in Rome. Have not tried it personally.
