We would like to tour a dairy/cheese production farm as part of a day trip from Rome. We are stopping in Ostia Antica in the morning and then have the rest of the day to drive anywhere else within reason before heading back to Rome in the evening. I am having trouble finding a cheese farm with tours and tastings that you can book in advance. AI keeps giving me suggestions, but many don’t even have websites and we don’t want to just show up somewhere without knowing what is offered. Any suggestions on specific farms or resources to find one? Thank you!

Here is a start, but there is a lot to be found online; even if you cannot read the Italian, the names are addresses are easy to understand. I would phone ahead, or ask your host--hotel or flat--to phone for you and inquire about a visit. If you do get the chance to visit, I think it imperative to purchase purchase cheeses either to eat on your trip or to bring home.
