Our flight from London got switched, and now we won't be arriving in Venice until 10:30pm. Our hotel is near Rialto. Should we just take a water taxi that late at night? Should we reserve ahead of time or just take one waiting at the airport? Other ideas? It will have been a long day of travel so I'm just trying to get us to the hotel as easily as possible. Thanks.
I had a delay on my trip in March so ended up on that flight, too. I just took the Alilaguna. It's still running when that flight arrives. Tell the worker at the dock that you want to go to Rialto and they'll tell you which boat to get in.
I didn't look to see if water taxis were available because at that point I was on hour 30 of travel lol.
From what I remember doing research, some water taxi services will put you in a land taxi late at night and then have the water taxi pick you up at Piazzale Roma. So if you go that route, double check what type of service you'll actually be getting.
Just so you're fully informed a water taxi will probably be 140e from the airport into the city, but you can also split that if you can find people to join you. There is a desk just like a regular taxi dispatch outside the airport.

To take the Alilaguna you'll want the Orange/Arancio line from the airport. According to the current time tables the last one leaves at 23:05 which you will hopefully be able to make and you should get to Rialto about midnight. It will probably be about 18e/person.

One time we were delayed multiple times and arrived in MXP in Milan at 1:30am and I just paid 100e+ for the cab into the city rather than try and deal with the mass transit. I stand by that decision.

May want to check that your hotel has late check-in and make sure they know you are not a 'no-show', but a late arrival.
Another idea would be to stay at a hotel near the airport and go into Venice in the morning.
I wouldn't reserve in advance, because you never know if your flight might be delayed. Treat yourself and pay the 140 euros for a direct ride to your hotel (ask your hotel if they have their own dock or one nearby).
Definitely treat yourself to the water taxi at night. It's the best way to arrive into Venice. The few times we've been to Venice, we booked one in advance. They had our flight #s so if we were delayed, it wasn't a big deal.
