Last night - stay in Rome or by FCO?

Our flight leaves at 10:00 am on a Tuesday. Monday we are leaving Capri and going to Rome. I was all set on staying near the airport but then after reading a few posts I am second guessing. I want to have a memorable last night of our trip.

Would it be crazy to stay in Rome and just taxi to airport early Tuesday? Sounds like people do it all the time. It's just early commute.

Also, I have been to Rome 2 times so I've done all the major things. What do you suggest for someone like me? No museums. We love walking to see sights, eating and drinking.

It depends how early the flight is. I tend to not stay in hotels near the airport because I want to enjoy that last night. We stayed near the train station our last night in Rome and took the Leonardo Express to the airport.

It's up to you.
You need to be at the airport no later than 7:30.
At that time of the morning, there is very little traffic leaving Rome, therefore the taxi ride is only about 30-35 min from the city center. The cost is a flat fare of 50 euro.
There is also the option of taking the Leonardo Express train for (I think) 15 euro per person (32 min ride), but the train makes sense only if you stay walking distance from the Termini station, otherwise taxi+train costs more than the taxi directly to the airport.
So staying in the city won't add much time compared to staying closer to the airport, unless you stay at the Hilton Airport, which is across T3 (10 min walk via aerial walkway).
Also, besides the ample choice of restaurants compared to the airport area, assuming the US will still requires a negative Covid test within 24 hours from boarding the plane, staying in the city the day before will provide you with ample choice of pharmacies where you can take that rapid test.

I’ve always stayed in Rome and taken the train to FCO airport. Note however my hotel was close the to train station, the departure schedule was convenient, and I only had a single carryon bag. Otherwise, a taxi is perhaps a better option.

We stay in the city.
We have a 10:30 departure this next trip and will stay right where we are in Trastevere- cab to FCO and arrive by 7:30.
We've done same in past without any issues.

IF flight was really early like 8 am then I am pretty sure we'd stay at airport.

Here's another possibility. What time do you arrive in Rome? If you arrive mid day, you could consider staying at the Hilton FCO. We are Hilton Honors members due to our work travel.

We stay at the Hilton FCO. There is a free shuttle bus that runs frequently into the city. We took it in and it was an easy walk to Piazza Navona. We had a nice early dinner in an outside cafe, then joined our Walks of Italy Evening stroll. We finished in time to catch the shuttle back to the hotel. We had a relaxing breakfast the next morning and walked to our terminal.
