At the end of our 25th anniversary trip, we will spend the second to last night in Varenna and the last night at Malpensa before our morning flight. Should we maximize what little time we have in Varenna and take the last train to Milan-Malpensa or is there a fab restaurant in Milan that we must absolutely dine at on our last night in Italy?

I would stay in Varenna and take a late train to the Malpensa hotel. We have always enjoyed dinner on the deck at ristorante La Vista (part of Alberto Milano) but there may be other nice restaurants.
I am sure there are some really great restaurants in Milan, but they will be expensive and will not have that view. I would remember that view much longer than the food I ate anywhere.

Wow - that view is gorgeous. I just looked at the train schedule and realized the last train is at 6:37. Do you have any suggestions for lunch in Varenna?

Looking at thetrainline.com , it shows last train to Milan leaving at 21:37 ( 9:37PM)
Are you sure about 6:37?

Oh - you are right. I probably limited the options when I typed my search on ItaliaRail from Varenna to Malpensa instead of Varenna to Milan. If I take the train you suggested, I'll reach my hotel at Malpensa after midnight. Maybe that is why it didn't show up in the ItaliaRail results. Thanks for pointing that out!

On the last day, I wouldn’t leave to late for Malpensa if you have an early flight. I would leave Varenna on time to have dinner at your hotel restaurant in Malpensa.
