To the best of my knowedge, there are not many private boat tours, and you don't say where you are starting from.

In my view, the best way to see the lake is to take a number of trips on lake steamers.

when are planning this trip, how many people, are you staying on lake garda and where?
"best" means different strokes for different folks, what i like you may not, look at your options and decide. private may not be "cost effective" to you if it's per person or per group, how many hours, motor boat, yacht, ferry, sailboat?

We are staying Hotel Flaminia at Sirmione. 3 days, 6 people. We we are thinking about ferries to different places but just thought if we had a private guide for a couple days we would see more of the lake so we did not have to get off and on and waiting ferries.

i'm sure you know that sirmione gets very crowded, especially with private buses, taxis, private cars, shuttles coming from milan and other towns near the lake. roam around early morning, go away during daytripper hours till late afternoon, then back when the the "tribes/gangs" are gone to enjoy it more.
several years ago lake garda on on the hidden horizons, many germans/austrians, then WOW it's slowly exploding. lake como is just so overrun with social media/instagram/ tiktok hoping to see george cloony who's become a frenchman, john legend, madonna, sylvester stallone, etc ;) and lake maggiore is quiet but who knows what will change. enjoy
look for wine tasting and vineyard visits in sirmione
bardolino: wine and olive oil tasting, with food tasting from local farms. take ferry to bardolino and a taxi to winery
