with one week; spend it all at maggiore seeing the sights there and day trips
or split between como and maggiore? how then would you divide the time? we love nature, walking, gardens, etc.

When will you be traveling?
When you say you have one week, does that mean 7 nights & 6 days?
I'd split the time ( 3 days each) among both lakes as previously recommended by Roberto when you posted a similar question back in November 2014.
If you like nature & hiking, you could go to The Cinque Terre for 3 days then go to Lake Maggiore of Lake Como for the other 3 days.

I will have a full week; travel to the lakes on the 24th and leave on the 31st.

Depending on what time of year you'll be travelling, staying for an equal time in both Varenna (Lago di Como) and Stresa (Lago Maggiore) will allow you to get a taste of both.
