Itinerary help Venice, Levanto, Florence for best flights to Santorini

Good Morning!
I thought I had my itinerary set, but I'm running into issues with flights to Santorini. Originally we were flying into Venice -3 days, florence 3 days, Levanto 4 days then train to Genoa or Milan to fly to Santorini. Flights from Genoa are long and expensive. Milan had good flights, but getting to MXP was long and cumbersome. I have most things booked, but local air fare and trains. Hotels can be rearranged.

Here are my new itinerary options for best flights to Santorini (cost, time, direct). Is it best to break up the train ride from Venice to Levanto? Is it doable to train from Florence to Rome airport FCO for same day flight at 12:25 pm or should we stay over in Rome?

Arrive Venice 6/14 - 3 nights
Train (3 hrs) to Pisa - 1 night (to break up the trip to Levanto)
Train to Levanto - 3 nights
Train to Florence - 3 nights (I could potentially take a night in Florence to stay in Rome)
Train to Rome airport - fly to Santorini 12:25 pm

or
Arrive Venice 6/14 - 3 nights
Train (5.5 hrs) to Levanto - 3 nights
Train (with a stop in Pisa for a few hrs) to Florence - 3 nights
Train (2.5 hrs) to Rome stay 1 night and fly to Santorini 12:25 pm next day
Santorinin- 3 nights
Naxos- 4 nights
Athens- 2 nights then fly home

Thoughts?

What is the rest of option 1? Does it finish out the same as option 2?
I can't even bring myself to combine two non-adjacent areas of Italy (it would kill me to have a five hour train ride in the middle of a trip), so I would have a hard time combining Italy and Greece, but both of these are "doable."
It is probably slightly risky to not stay in Rome before a noon flight but not certifiably so. Train strikes do happen though, so option 2 is probably safer.
Just think about if you are okay with two days or less everywhere except Naxos. It's a lot of travel, good luck!

Yes, the Greece itinerary is the same either way.

I could also do my original plan and fly out of Genoa. the flight would be $300-400 more money and 5-6 hrs with layover vs 2.5 hr direct flight from Rome or Milan. I was thinking a longer train ride would be more enjoyable over a longer flight.
