itinerary help for honeymoon

Hi all --

I've been reading through tons of posts, and am feeling like I could use some personal help! We are going on our honeymoon the last two weeks of April - 4 nights in Paris --> 2 nights in Florence (Portrait Firenze hotel), driving to Monteverdi Tuscany (hotel 30 min from Montepulciano & 1 hr from Siena) for 3 nights, driving to Rome for 3 nights (Portrait Roma hotel).

We would love some input - what museums and tours in Italy do we need to book in advance? What is not to be missed? We'd love to spend time doing a cooking class or a bike tour, wine tasting, etc. as well. We are huge foodies and outdoorsy/active. Are there places we should stop to see on the road from Florence and to Rome? We are open to restaurant recommendations as well, though are not as worried about finding good food as planning a great itinerary filled with lots of great activities and sightseeing!

Special activities - classes, small group tours, and the like should be booked in advance. If you want to visit museums in Florence and Rome, which ones? Some need to be booked in advance.

Cant help with Italy.. but if you want to go up the Eiffel Tower you should try and book a time slot if you can.. they are likely all gone by now but check for your dates.. otherwise take the line for the stairs to second level and walk up, shorter line and when on second level you can then purchase tickets to summit if you wish ( I personally find it overrated. .lol )

4 nights in Paris - Book ahead for Eiffel Tower, and visit Notre Dame + Sacre Couer the same day.
Consider a 2 day Paris Museum Pass for the remaining days, one day for the Louvre, the other day for Musee d'Orsay (plus other sights of course).
2 nights in Florence - Book ahead for the Academy (David) and the Ufizzi.
3 nights in Monteverdi Tuscany - Visit San Gimignano en route to your stay here. That leaves you 2 full days - one for Siena and the other for Montepulciano/Montalcino vineyards etc.
3 nights in Rome - Book ahead for Vatican Museums and Colosseum.
