Itinerary Conundrum Solved? Learn Something New Each Time

So, if you've been following my adventures, I've been looking for help with a Venice -> Somewhere -> Piedmont -> Valle D'Aosta itinerary for fourteen days at the end of August and the start of September.

Original Plan had been:
3 Days Venice
Stop in Padua
2 Days Bergamo
2 Days Lake Como or Maggiore
4 Days Alba
2 Days Aosta
Fly Home

Revised plan was:
3 Days Venice
Stop in Padua
4 days in Emilia half of Emilia Romagna
4 Days Alba/Asti
2 Days Aosta
Fly Home

I've been having a ton of trouble figuring out my Emilia 4 days. I want to stay in Bologna, I want to stay by Reggio Emilia, I want a cooking class, I want to visit a P-R maker and an Acetaria, have some great meals, see some castles, maybe check out a car museum, do a day trip to Ravennna... Basically, I could spend a week in E-R and not solve it all.

And then I was looking at Piedmont. 2 days for Turin. Langhe, Roero, Bra, small villages... slow food... wine, funghi, agnolotti...
I can't do this in 4 days either.

Revised itinerary: Maximizing the Schwartzenegger principle:
4 nights Venice (maybe day trip to Ravenna)
Running stop in Padua on way to
2 nights Turin
5 nights at agriturismo in Cuneo
2 nights Cogne in Valle D'Aosta
Possibly spend afternoon in Milan before flying home at 22:00 out of Malpensa.
Schwartzenegger Pirnciple, in Italian: Arrivederci, Italia... Tornero Emilia--- Tornero.
