We are planning our first trip to Rome, Florence and Venice in October of 2025. I have been reading everything about the Jubilee and how many people are expected to visit. My question should we postpone Italy to 2026?

I would not postpone. You are in advance on your planning, which is excellent. Make a plan and get lodging booked as soon as you have flights. Lodging will be more at a premium in Rome than elsewhere, but it usually is.
Have you considered booking a Rick Steves Venice-Florence-Rome tour? There are four such tours in October, 2025. We took this tour in mid-October last year. It was so nice having all our hotels and transportation between cities taken care of.
