I thought I had read somewhere that the train schedule updates in June. Is that correct? I was searching for fares in September and it looks like you can buy tickets already on Trenitalia. If I buy them would they possibly change in June or have they already changed?

If schedules are posted, then that is the "update" people are referring to. Once published and available for purchase, they don't ordinarily change, except of course for the unforseen (if there's a crash on a line, for example, the repairs are going to affect schedules).
Sometimes schedules are posted in batches, so not all the trains that will eventually be running will be shown. But any trains showing are ones that should be running.
In other words, if you see a train for September that you want, you can buy it now and assume it will run as scheduled.
