Italy touring in October

My boyfriend and I are travelling to Italy in Oct and was interested in comments on our itenerary. I've been to Europe 3 times before using RS guides and have found that they've been pretty spot on to what I was interested in. We would like to do the touristy things half time and the other half spend some time to stop and enjoy the country.
Current thoughts on itenerary:

Thursday, Oct 2 Fly in to Rome. Wanting to see the main sites, but really would like to attend a Pope audience on the Wed, the 7th and will request tickets for that. Since we'll be in Rome for 7 days, it might be best to find a place outside of Rome and do some day trips from Rome until the 7th. Maybe hit Assissi here or on our way up north.

Oct 7th after the Pope audience take off north, thinking Tuscanny area, would like to try a half day cooking with a chef, does anyone have recommendations on that? Also, can you rent scooters and go to winerys in the Tuscanny region? Or are there biking tours?

We're flying out of Milan on Tuesday, Oct 20th and would like to stay in Cinque Terre for a few days with the possibility of going to Florence and/or Venice. My boyfriend would like to see Greece. Is it worth the time to fly out of Rome or Venice and fly to one of the Greek island cities like Myonkos and do a 3 day cruise and fly back to northern Italy? I hadn't seen any cruises from Italy to Greece that weren't more just a source of transportation.

We're looking at low budget most of the way. Any suggestions/tips would be most appreciated!

From Rick's Guidebook Update: Osteria la Congrega has a new website with info on its cooking classes: www.osterialacongrega.it.

If you haven't been to Orvieto it's a great smaller town about 1 hour north of Rome by train.

Not sure about the Greece portion of your trip--it may be off-season.

Hi, Christy: If you decide to stay outside Rome and day trip (and are on a budget), I'd recommend a B&B in Palestrina called Anne's Place. Check out the stellar reviews on Tripadvisor and their wonderful website, www.byanne.com, which is chock full of good info. Anne and David will spoil you rotten and can assist you with your sightseeing.
