Italy in winter or over Easter?

We really want to travel to Italy to see Venice, Rome, and a few days near Florence (possibly take day trips to Pisa and into Tuscany). With our work schedule we can spend about 10 days to 2 weeks and have two options: Go in February when it may be cold, but not touristy. Or go the first week in April over Easter celebrations. Does any one have experience or a preference between these two times of year?
