My husband and I plan to visit Rome, Florence and Sorrento May 10 - May 21. Just wondering if anyone would care to comment on a recent experience in any one of those places (good or bad) to help us in our planning?

If your planning on seeing any of the major site I would recommend you check if reservations are still available and lock in your lodging too. I can imagine it is slim picking for Sorrento at this point or just the higher price points will be available as this is a popular home base for the Amalfi Coast and Pompeii.

Enjoy a spritz and the view-it feels like you can reach out and touch the Duomo

Do a food tour with Eating Europe ( early in trip if possible)
Sorrento
One of our best days was the boat trip/day trip to Capri we did with Mondo Guides
They have several other very affordable tours
Pompeii with their guide was also really good but the boat to Capri was so much fun-skip the Blue Grotto-huge tourist trap and time suck
We really enjoyed the trip all the way around the island

I don't think you necessarily need anyone's 'recent' experiences. It's more important that we know what sorts of things you are interested in.
What do you want to see and do in each of these destinations? The most-visited attractions in Rome and Florence (Uffizi, Accademia, Duomo's Dome, Borghese, Colosseum, Vatican Museums ) will require advance, timed-entry reservations, and they've been selling out very, very quickly once tickets become available so time is of the essence.
I personally do not recommend the Roma Pass as it doesn't fully cover entrance fees to more than one or two attractions, you still have to make those advance reservations to the Colosseum and Borghese, and it doesn't cover the Vatican Museums. You might as well just purchase those tickets individually. Florence's Firenzecard also requires advance reservations to the Uffizi, Accademia and Brancacci Chapel but at least fully covers far more than one or two attractions during the 72-hour +48 hour validity of the pass.
I might guess that your most cost-efficient flights might be in and out of Rome? In that case I'd go directly to Sorrento upon arrival, then to Florence, and end your trip in Rome.
