When we drive long distances in Italy we take the Autostradas, like Interstates in USA. They begin with A- then number.

If you go to the ViaMichelin app or website, it will show you various options and tell you exactly how much any toll roads will cost. It will estimate drive times for you and how much fuel whatever type of vehicle will use.

The route with least traffic through the Mountains between Bologna and Florence has less traffic because it's basically an infinite series of hairpin bends and not enough tunnels. Follow Kim's good advice and use viamichelin for your planning. The avoid tolls option will show how long it takes on non Tolled motorways.

Is there a reason you are driving? Some special place along the way you want to visit? Otherwise take a 300 kmh train to Florence and get a car there. There isn't much to see before Bologna.

There are 2 or 3 speed traps on the causeway connecting Venice and the mainland districts. All the mountain section of the A1 is monitored by the Tutor system that measures the average speed of each vehicle between two points.
