Italy 4/22/25 - 5/2/25 Arriving in Venice - Departing from Rome

In April, I booked our flights and haven't made any other plans. I chose flying in to Venice and leaving through Rome based on business class seat availability using points (sales and transfer bonuses). This will be our first trip to Italy; however, we did have one or two stops on a cruise in 8/23 and 7/24. I'm looking for advice on an itinerary. Some info about us: We're looking to enjoy slower areas of Italy. The Jubilee will be in full swing and we want to stay away from areas that will be very crowded. We're excited to eat really good food, but we're not 5 star Michelin people. We don't mind museums but would rather be out and about enjoying architecture and the streets or hiking. We're used to walking around 10-12 miles a day in Europe when we visit. I also need to plan some down time. I tend to plan trips where we go, go, go and try to experience as much as possible. So, some slower relaxing days would be nice. Rather than try and see several different areas of Italy, I'm thinking staying in the Northern end might be better and leave the Southern for another trip; Same with Rome - there will be so many people and even though we're flying out of Rome, I'd rather visit the city another time. I'm not a big wine person. I live about 3 hours from Napa and have no desire to go. I've never visited any of the wineries in CA where I live so not looking to do that in Italy.
