If interested in Bologna, Madrelingua is very good. I did 4 weeks there in the spring and was planning on returning this fall. Couldn’t, so hoping for next spring!

I did a week of Italian immersion in Lucca at the Lucca Italian School. The school was very good. I enjoyed the classes and the optional afternoon activities.
And Lucca is wonderful. It was perfect to roam around in after school. People were friendly and living in a smaller city was perfect.

I highly recommend Passaporto Italia in Bari. They can customize a class for whatever length of time you want. They also take students on field trips. https://passaportoitalia.com/
Puglia is off the beaten path and is far cheaper than northern Italy. There are also fewer English speakers, so it is easier to get some practice in.
