Italian honeymoon itinerary feedback

Hello all!

We have booked our lodging and a few of our activities for our honeymoon, and are starting to choose restaurants. Below is our itinerary with restaurants we are considering- would love any feedback! We will be traveling in mid to late May, so also wondering when we should start making dinner reservations. We will be renting a car on the morning we leave Venice and returning the first day in Florence. Any suggestions welcomed! We are 31, very active, and like to visit off-the-beaten-path spots, though this is our first trip to Italy so we want to hit at least some the major sights as well.

Venice (2 nights at Ca'Centopietre)- nothing in particular planned besides a gondola ride. Considering a dinner at Enoteca Ai Artisti.

Lake Garda (3 nights in Malcesine at Beach Hotel du Lac) - We plan to rent a boat, hike up Monte Baldo and take the gondola back down, and visit Malcesine Castle. Considering dinners at Gemma in Limone (if I can figure out the ferry system to get across the lake...) and Osteria al Pescatore in Brenzone).

Cinque Terre (3 nights in Monterosso at an Airbnb in Monterosso)- we're doing a sunset tour with Angelo's Boat Tours, and plan to hike as much as possible. Possible restaurants: Al Gondoliere, L'Ancora Della Tortuga, and Miky.

Montepulciano (3 nights at Hotel Panoramic)- we have a Vespa tour reserved and are planning to visit a spa, probably Terme di Montepulciano. Restaurant possibilities: Tre Stelle, La Porta, and E Lucevan Le Stelle

Florence (4 nights at Palazzo Guadagni)- we're planning to do a city bike tour and have tickets to see Rigoletto, but haven't done much planning besides that! Definitely open to favorite activities and restaurant suggestions.

My suggestions for Florence include: dining at All'anitoo Vinaio (by the Piazza della Signoria) and if you enjoy hiking then I suggest walking up to the Forte di Belvedere. It was a steep climb during 80+ degree weather, but the views made everything worth it. There was a sculpture exhibit on top and they had a full bar where we enjoyed wine overlooking Florence. We also enjoyed spending time in the Mercato Centrale and in the Piazza di Santa Maria Novella. They have excellent smalls pubs/bars all along the Piazza (we enjoyed Fiddlers Elbow and Joshua Tree Pub the best) and it's a great people-watching place to wind down the night!
