Italian cooking classes

I am interested in going to Italy this fall and want to shape my travels around possibly some cheese making classes and pizza dough classes. Does anyone have ideas on this?

I took a fun pasta making class in Rome from Walks of Italy. The chefs made the rest of the meal and we all sat down and enjoyed a fabulous dinner complete with wine. Definitely worth the price. I did this on my arrival day in Rome, it kept me up until 11 pm. Almost had no jet lag the next day. Cooking classes are a great way to connect other travelers as well.

The owner of this school (Pino Ficara), used to teach at a cooking school in Paris and I took a class from him there. He was an outstanding instructor. He has now opened his own cookery school in Italy and I think this place would be a good bet.
