I flew ITA non-stop LAX => Rome outbound November 2023 on a new A350. Flight was fine - I paid for an extra legroom seat in economy. Return was Rome to Boston on an A330 - it was in the older Alitalia premium economy seat - excellent food and quite comfortable. Service was fine both ways, maybe not up to Virgin Atlantic standards - but then that's a very high bar, IMHO.
We have flown ITA from Miami several times and have found their service to be excellent. The newer A300Neos are beautiful. Not sure if that is what they fly from SFO. ITA is the only airline with non-stop service to Rome from Miami and we definitely rather have the non-stop flight whenever possible.
We flew ITA business class in October JFK to VCE then FCO to JFK. Everything from service to food to seat was exceptional. We chose them because their fare was the lowest we found with the most convenient routes. We wouldn’t hesitate to recommend their business class.
Thank you, they do have the most direct flights, non stop into Rome and then onto Palermo. Appreciate your comments.

Did you book the business class directly, on their website?
I tried to do that a few years ago, for a trip to Sicily, and the site had no capacity to book business class. I was directed to phone an agent, which I did. The agent was based in Albania and she told me that I had to book by phone. this made me a bit nervous (probably silly of me) and we ended up flying Lufthansa via Munich to Catania.
I'm hoping that this has changed, as we will go to Puglia again this fall and I do know that ITA is the best as far as price.
