We will be staying in Sorrento, but are thinking about a day trip to Ischia. Any recommendations for activites, lunch or ???
We did a daytrip to Ischia in 2013 from Naples.
When we arrived off the ferry, there was a bus strike!
So instead, a local advised us to get a tuk-tuk taxi, which we did.
We had the driver take us to the Castello Aragonese, about a 15 minute ride.
It was amazing, and we were in there most of the day!

One question: Are the Tuk-Tuk's cash only? If so, how much to the Castello if you recall?

I believe it was like a taxi would have cost, so not that much.
I do remember it being hilarious, and the lady driver drove really fast , with blaring pop music, and my friend and I screamed with laughter the whole way.

I am spending a number of nights in Ischia in September, and have been researching the island. It has a great bus system for getting around, or you can do the cab thing. Be aware that the ferries dock at either Ischia Porto or Forio, which is on the west coast.

The Mortella gardens are on the northwest coast of the island near Forio. There are amazing spas all around the island.

No, we only went to the Castello as we didn't want to deal with the bus strike.
We were in the Castello for about 4 or 5 hours, and had lunch there too.
