We are having a pretty hard time finding a double room in Venice for four nights starting May 15. We had hoped to stay below 200 euro per night but we're not having much luck with that so far. I know mid-May is busy season but that's still three months away . . .
The Sensa is not until June 1 this year. There can always be some large convention going on. I checked my favorite hotel and the prepaid, nonrefundable rate is 220/night until Friday the 16th when it jumps to 260 for superior room. I notice that they have no classic or terrace rooms available.
Try Alloggi Alla Scala. Nice rooms with no wifi or breakfast but cheap (I think a double is somewhere around 100 euros) and right at the base of the Scala di Bovolo.
If you are booking through an online booking service they may have used their allotment of rooms. Find some hotels you'd consider then try booking them directly through the hotel's website. I had the same problem a month ago and the method I described worked for me. I found several hotels, B & B's that were unavailable on travel sites and bookable through their own website.
If simple, one star, is OK, I really like Hotel Doni. I've stayed there several times. A great location. It's on a small side canal behind the Ducal palace. Less than a 5 minute walk from San Marco. Very quiet (it's on a tiny canal-side walkway). I stayed last Sept for about 80E in an en suite room. The building/stairway is quite old, but the bathroom was sparkling new. You would need to specify en suite, assuming that's what you want. Some rooms shared bathrooms, and those looked much older; I wouldn't want to take that route. No elevator, but the owner carried my luggage up, without even asking (and I certainly look/am quite capable of carrying my own luggage upstairs). And as one last note in case it matters, the breakfast is very, very simple but was adequate for me: rolls, butter/jam/nutella, some type of juice-like drink, and coffee.

You won't have any trouble filling your time in Venice. Just walking around is fun. Be sure to walk out to Punts del Dogana for great views
