In need of Trastevre/Rome/Florence Restaurant recs

Hi all!
Seeking best breakfast (coffee) lunch, dinner, and bar recommendations in Trastevere, Rome, and Florence. We are huge foodies so we are always willing to go the extra mile for the best eats. Looking for best pizza, pasta, florentine steak, rooftop bar, gelato, tiramisu etc.! Any and all recs welcome, would love anything not incredibly hard to get into or long lines to wait in but we understand that some of the best things come with a wait! Thank you for your help :)

Have you considered taking the Eating Europe Rome food tour in the Trastevere? The tour we were on sampled from some of the popular restaurants as well as the local’s spots. We really enjoyed it.

Elizabeth Minchilli and her daughter Sophie have food recommendations on their websites and Instagram. They both live in Rome, lead food tours around Italy and Sophie offers them in Rome as well. Both are very knowledgeable.
