I am just curious to know what city or town is worth stopping for a day or two between Florence and Venice?
I support Bologna. One of the most agreeable of the large Italian cities. Also a good base for interesting towns around, such as Ferrara and Ravenna.
I'd also suggest Bologna, my favorite city in all of Italy!
I liked Bologna and I liked Ravenna a lot as well. But though it's a tiny bit less direct than these two, I'd give a vote for Verona. I went last month on a day trip from Venice and just found it to be a lovely, lively little city for a visit. There's artisan markets to wander, great public squares, the old arena. I really enjoyed it and I wished we had more time.
Bologna or no stop.
Just make sure you're not short changing yourself in Venice. If you have an abundance of nights then have a stop in between. If you only have 1 or 2 nights in venice then forget stopping along the way and go on to Venice. There's no other city like it.
You might consider Padova for a different experience.
I preferred Padova and Ferrara to Bologna. Look into all three and see which one (or ones) interests you. Each is not too far from the others, so if you allow two days you could spend the first day in one and the second doing a day trip to the other.
Verona is awesome too, as a drive through, not necessarily for 2 days. You don't want to shortchange either Florence or Venice though!!
Rick and others have done episodes in Bologna, it seems like a very worthy place to visit
There is a great town called Serrevalle Pistoiese. It is a great location for exploring the area. The Relias LaBelluccia is a great hotel with a cute restaurant where the chef will make almost whatever you desire. They have a built in pool and it is very clean, the rooms are spacious and tastefully decorated. Check it out

I was going to suggest Padova and still do. But, I am surprised by the number of people who mention Bologna. That's a new city for me - other than changing trains. Think I know the "new" discovery for my trip this summer. THANKS!
I enjoyed Bologna a lot, was underwhelmed by Padova, and Verona is one of my favorites, but it may be too crowded in opera season to be enjoyable, unless of course you can get opera tickets. I've heard that it's a very special experience even if you aren't opera buffs.
My favorite is Ferrara, the city has character, some good museums and Ferrarese food is very distinctive.
