Really depends on your taste. Do you want Michelin Star? Homey and local? Famous places? A great view? Pasta and meat? Seafood? Pizza? Want to get way off the tourist path to some nondescript place in the suburbs?
Unfortunately "the" places that everyone recommends may not be the best, but lots on here probably have some favorites.
I would pick one in Testaccio, not sure which one, but we have just wandered the streets around 8 pm ( early for Italians) and been able to get into some wonderful ones.
Agree..one of the classics in Testaccio, like Felice or Checchino dal 1887.
Armando al Pantheon is also excellent. They do get lots of tourists, but....... If you go there, let them offer suggestions on which dishes to order. We usually stick to the specials of the day. It's a super restaurant.
My sample size is admittedly small but I would go back to Elle Effe in Campo d’Fiore for wonderful Sicilian food and fabulous desserts. Good luck!
Oh, I misread and thought the search was for Roman food.
I don't think there's ONE single restaurant that you can't miss!!
Another one I'd add to the list, mostly Roman, would be AL MORO:
