If you could ONLY eat at ONE Roman restaurant, which would it be?

Hi,

We're in Rome for a limited time (just a few days). Are there any restaurants that we should not leave Rome without partaking in?

Really depends on your taste. Do you want Michelin Star? Homey and local? Famous places? A great view? Pasta and meat? Seafood? Pizza? Want to get way off the tourist path to some nondescript place in the suburbs?

Unfortunately "the" places that everyone recommends may not be the best, but lots on here probably have some favorites.
