We've been to Rome twice already and have seen most of the sights, but on our next trip to Europe in late September, we suddenly have a one-night layover in Rome on our way home. Our flight arrives at 4:00 pm and we leave again the next day at 12:55 pm for home. I want a great meal that night, maybe one extraordinary sightseeing experience (someone suggested the Coliseum at night) plus I'd love to wake up in a hotel with a lovely view for the short time available before heading off to the airport again. This will be the end of a 30-day trip to England, Ireland, and the Costa del Sol in Spain, so I want things to be easy and will spend a little extra to get it. Any thoughts?

RS has a Rome night walk. Piazza Navona is fun at night as well. Trastevere would be a good place for dinner (Taverna Triluzzi?), stroll across the pedestrian bridge to the Lungotevere. Piazza San Pietro gets emptied out at about 11pm, but the piazza and church at night are beautiful. Remember to toss a coin in the Trevi Fountain (I forgot one year and didn't get back for 12 years).
For hotels, some have rooftop terraces with great views even if your room doesn't.
I've thought this hotel suite looked like a good option, although I've not had cause to stay there...yet. It apparently has it's own terrace.
My favorite somewhat upscale restaurant is 30-35 minute walk or a short cab ride away, Osteria 44. About €100-110 for dinner for two with decent wine. Sergio gives exceptional service and the food is magnificent.
Just a nice dinner and a late night walk back could be lovely. You would pass the lovely Bernini fountain in Piazza Barberini, then the Trevi fountain, and the beauty of Piazza Navona. It's very safe to walk in Rome at night, so don't be afraid at all.
We stayed at the Lancelot Hotel in Rome in their top floor suite which has a direct view of the coliseum. Rick Steves recommends this hotel. If you can get that suite it would be perfect for a one night stop in Rome.
By the end of those long trips we are usually ready for an American hotel by our last night. The Marriott Grand Flora has a rooftop terrace where breakfast is served and from there you have panoramic views of a Rome including the Vatican, Borghese gardens, etc.
Just wanted to add that the suite at the Lancelot has a large private terrace overlooking the Coliseum. The whole staff speaks English and they are very welcoming.
