I'm thinking to book a taxi for transferring us from Bolzano train station to Santa Maddalena
How soon should i book the taxi considering it's peak season?

You can easily get a taxi at Bolzano’s train/bus station.
The cost will be about €160.
If staying at the hotel let them call it. A slight oddity with taxi meters. When you call for a taxi, the meter will start when the taxi takes the call, so it could have a couple of euro on the meter when they show up. Don't be slow getting to the taxi or make them wait as the meter is running. If there is a taxi stand near you hotel you might be able to grab a taxi there. Just give yourself a little extra time.
I think you can take a train to Chiusa, and I know the buses go to Santa Maddalena. (Gorgeous little town!)
