If your hotels have decent cancellation policies (one I am staying in in Rome, for example, allows us to cancel with no penalty 24 hours in advance, while one we have in Tuscany will charge us the entire fee if we cancel three weeks or less before), then make them as soon as you know you definitely want to stay at a certain hotel. We made our reservations early in Tuscany, and as a result, were the first to request a certain room, so there's a good chance we will get the accommodations we asked for. If hotels require deposits upon booking or have tough cancellation policies, hold off until three to six months before you leave. Some places may not even take reservations this far in advance.
