Flying from Leonardo da Vinci airport, how early should we arrive for an April mid-morning, mid-week international flight? Does it take less time for check-in for business class rather than coach?

To be safe, consider two hours a minimum. Many of teh departure gates are far from the check-in area. Additionally, you never know what snafu there might be at security--I've seen long lines there in the past.

I always arrive 2 hours before and barring any unusual problems, which sometimes there are, there is time to get a snack or drink.

I always allow 2 hours. The security line is where you may run into delays and it doesn't matter what class you are flying to go through security. Usually the line moves very quickly. However one time security took over 45 minutes and we were quite glad we arrived 2 hours in advance.
