Can you recommend a good hotel that offers early morning shuttle service to FCO? We have a 6:30AM flight

Hotel Hilton. You don't need shuttle. Just walk to the terminal in covered walkway.

Another vote for the Hilton. I use Hilton properties exclusively when I travel for business. I got a free upgrade to the Executive floor, which was a nice perk.
Depending on what airline you use, you may have to go to the terminal that is further away. If needed, the hotel has a free shuttle to that terminal. I suggest you contact them with your particulars.

A few years ago we stayed at a hotel about 10 minutes from FCO. Iit was then the Club Isola Sacra, now it is the Golden Tulip Isola Sacra. It is a very nice hotel, nicer than our usual lodging, with swimming pool, etc. There is shuttle service to the airport, at that time the charge was 6 euro.

I stayed at the FCO Airport Hilton two nights ago. Perfect for early morning flights as you walk across a skybridge right into the terminal....5 minutes. I have stayed there several times. Eliminates stress. There is also a car rental return there.
Think about eating before leaving the city, the restaurant at the hotel can be pricey and there are no other restaurants nearby except in the terminal.
There are two Hiltons at the airport. Be sure to choose:

And also there is a complimentary bus to the center of Rome in front of the hotel. Time table is in the hotel.
