I'm having trouble locating a good place to stay for 2 nights in Cinque Terre. Does anyone have any recommendations?

Do you have a preference on which of the five towns you'd prefer to stay in? Also, what price range and comfort level are you looking for? Which hotels have you tried so far (send me a PM with that if you prefer)?
Have a look at these lists for Monterosso and Vernazza to see if you can find any vacancies. There are listings for all the towns in the Italy guidebook.
You could also try THIS hotel in Levanto. While Levanto is not "officially" part of the Cinque Terre, it's also a beautiful town with a nice beach, and only about five minutes from Monterosso by train.

We stayed at Baia Hotel in Monterosso. It's on the waterfront & close to the train station.
Monterosso is the largest village in CT & therefore there are more accommodations, restaurants & amenities.
Monterosso is also the only village in CT with a sandy beach.

My husband & I are going to CT in September & I found a nice place to stay on Tripadvisor.com We are staying at Elisabetta Rooms for a couple of nights. It's located in Vernazza.
