Traveling in just 3 weeks, mom & daughter trip, and wanting a lovely mid-priced hotel ($350/night) with a pool in countryside of Florence. We want to stay for about 1 week and this will be our hub to explore. I'll not have a car. Appreciate suggestions!

“Countryside hotel” and “no car” should not appear in the same sentence.
I can give you hotels with pools in Florence, even in some green setting, but if you want to use a countryside hotel to explore Florence and surrounding areas you need a car.
Many years ago, when doing a semester abroad in Florence, our daughter arranged for us to stay at an Irish nunnery in Fiesole (where The Room with a View was purportedly filmed). It was an easy walk to catch the bus into Florence and a quiet, outside of the city, place to stay. Have no idea the name of the place or if it still offers rooms. It was very simple and comfortable, though no amenities like a pool. But maybe something in Fiesole, near public transportation, might meet your need?
Years ago, when I was young, I stayed with a friend in Fiesole. Not sure if there are hotels with a pool. It's uphill from Florence.

The two above are in a nice green setting, yet so close to the city center that you can walk to it or take a bus or at least not spend a fortune in taxicabs,
We loved Florence and staying there at the Balesteri Hotel.
Outside of Florence, consider staying in Siena.

Susan, I'll agree with the previous posters that if you're planning to explore from a transport hub, you would have a difficult time doing that from the countryside without a car. Fiesole, as some have recommended, might be a good choice as it's outside of Florence yet near enough to be able to get into the city via public transport without much ado. You can actually see Florence from there.
That said, the two Roberto recommended are probably even better, IMHO. As he said, while outside of the busy historic city center, they're reasonably close enough for sightseeing on foot and easy access to public transport. No wrong answer unless it's wrong for you but personally I'd prefer to be closer into central Florence than further away if planning on doing a lot of sightseeing away from your base hotel.
Where from your base are you planning on sightseeing?
We had one of our best stays in Europe back in 2006 at Le Boscarecce, outside of Florence. It was a beautiful Tuscan countryside location with great food, views, and hosts. That was 18 years ago, but I believe it’s still run by the same couple today. You definitely need a car though.
It is very late to be booking this popular destination. So you'll need to compromise on price, location, transportation, or amenities. You may get better advice if you make clear that you are mainly "visiting Tuscany", and not just (the beautiful city of .. ) Florence. I don't love to drive abroad, but a multi-day visit to Tuscany is difficult to do without a rental car. The cost of imagined taxi or Uber rides will quickly eclipse (expensive ... ) car rental costs, and you'll be spending time waiting in the heat for your next car ride.
You may also wish to describe your stops before and after Florence, and how you are traveling.
