Depends a lot on your budget. We really like Hotel Pendini in Firenze.
Check out Bookings.com, seems this is a popular way of booking rooms in Italy. We used them this time for half of our hotels because in some places the Rick Steve's suggestions were either already booked or have gone way up in price. Other poster have said good things about the web site.

I like Hotel Paris near the train station and Hotel Bigallo near the Duomo in Firenze.
I would need to know your budget for Florence before giving a good response. We have lived in Florence and we visit several times a year, usually staying at the St. Regis Florence which is excellent in every way and extremely comfortable. They really pamper guests. www.stregisflorence.com It is in an historic palace designed by Brunelleschi and near the Arno River in a very central part of town.
Pensione Bencista is in the lovely small town of Fiesole, a quick and easy bus ride up the hill from Florence, and is a terrific place to stay - spent 8 days there in 2008. Beautiful, historic-looking family-run inn, great views from the rear rooms overlooking Florence, expansive outdoor terrace overlooking nearby olive groves. Food is wonderful. Excellent breakfast included in room price but they also serve dinner. You can even keep your wine bottle on the table for the next evening's meal! Staff is very friendly & helpful, the house has several "living rooms" (one with grand piano which I regularly played) where guests can relax, read, play cards, etc.
Thank you for all the responses. Our budget is a little flexible...we usually stay in 3-4 star hotels. We can usually spend up to $200 euros/night as we use points for our plane tickets so that is a HUGE savings.
If you want to go B&B, then I'd recommend Katti House in Florence
