My husband and I along with a friend stayed at the Hotel Stettenbeck for 3 nights in October of 2022. Friendly staff, nice breakfast room with views and a good choice of breakfast foods. Elevator & free parking behind the hotel. Very comfortable beds & rooms with views. Within the pedestrian zone, but you can drive your car easily to the parking area. No cons. Cute town with good restaurants and easy walking areas. I would stay there again.

The mountains, cable car, pedestrian zone. The hotel has an elevator as well.

We do not plan on renting a car. Many on this forum have not and did fine without one. We may change our minds on this and can rent one for a day or two if we deem necessary. Your thoughts?
I think you said Sunday was the day you might rent a car and drive to Cortina. I drove from Cortina to Ortisei on a Sunday, mid-afternoon in October. Now I am used to driving Hwy 1 on the Northern California coast, but the groups of motorcycles and groups of specialty cars going faster than I could drive really had me clutching my pearls!
Why don't you see if you can find a small van tour group for the drive or a private driver - the scenery is fantastic!
There are several routes across the Dolomites - we just picked one without research.

Yes, we did - for 6 nights. We arrive late afternoon/ early evening on a Sunday night if the stars align and there are no flight delays. We will take the train to Bolzano and have a driver pick us up there to take us to Ortisea , We'll spend Monday getting over our jet lag and orienting ourselves to the area. If after a few days, we feel the need to explore further, we'll either rent a car or find a day tour to Cortina. Thank you for the heads up about the drive.
