I have an early morning flight and need to stay at a hotel at the Rome airport. Any suggestions?
Hilton. It worked well for our early departure. We had to leave so early, though, that we missed their breakfast.
There is a regular Hilton and a Hilton Garden Inn, which is a bit cheaper. The hotels can get fully booked, so reserve early. Also, the prices increase as your date nears.

For a 6am or 6:30am flight, yeah, the Hilton, despite it's being boring and expensive, with maybe the dreariest food in Italy. But, you walk across a short walkway above the road and straight into the airport.
But for later flights or just if you'd rather avoid the Hilton, we like the Domina Guest House in Fiumicino. It is much nicer than its photos on booking,com and has a self-serve kitchen stuffed full of food and drink. Several good local restaurants within a few blocks.
You can always walk into the terminal for a better dinner
( we did eat at Hilton-boring is a perfect description but it was fine and service was good

We booked with bkft ( that may not have have been optional, can’t recall) and the front desk had a very nice packed bkft ready for us
Hilton Airport also my choice.
Walk across to the terminals for food however. Choices are much better and cheaper than the Hilton hotel restaurant. Many of the airport restaurants are before security, so you can go without going through security.
If you have a rental car, after you drop off your luggage at the hotel when you check in, you can also drive to dinner in the town of Fiumicino, and return the car after dinner. Then from the rental return you can walk back to the Hilton.
Plenty of nice seafood restaurants in Fiumicino.
