Which would you recommend for our 4 night stay, and why?
I've stayed at Residence Adler & was quite pleased.
A good way to get unbiased opinions is to look at Tripadvisor.

I have only stayed at Hotel Oceania but both visits were fabulous. The coffee in the morning is delicious, the bed was really comfortable and the staff went above and beyond to help us make dinner reservations at all sorts of restaurants where we always had a great meal and a great time. The staff was also welcoming and accomodating if we need wine glasses, etc.
I have only stayed at the Oceania and can definately recommend it. As stated before the morning coffee and breakfast was more than fine. The owners and all the staff were more than helpful with every question even offering to help plan our stay and making reservations for us. Have a great trip
We stayed at the Adler and highly recommend it. They have a wonderful covered outdoor terrace (surrounded by plants so there is no view), which has a beautiful Roman running fountain, where you can have your breakfast if the weather is warm. The hotel is very elegant and although we had their quad room, it was huge.
I would say neither - rent an apartment in the historic district, have twice the space, pay half the price, and buy your own breakfast from the vendors around Campo dei Fiori every morning just like the locals.
