I know I've seen recommendations for hotels in Mestre before but now I can't find them and need a referral. I have one of those very early flights and need a hotel that has a shuttle to Marco Polo.

It's no faster to get to Marco Polo from Mestre than it is from the Piazalle Roma in Venice. And buses from Piazalle Roma are timed to match the earliest airline departure times.
Stay in Venice. At worst, you walk to the Piazzale Roma to catch the bus.

Follow the above advice. Mestre is NOT the only place to stay to get to the airport!

Thank you for telling me that I can stay in Venice. I have done that many times for both pleasure and business and this time I have business outside of Venice and it is much more convenient for me to be in Mestre so that I have access to both the airport and the train to meet clients quickly. If you have a recommendation for a hotel in Mestre I would really appreciate that.

Well if your stay is totally for convenience to the airport why would you choose Mestre? Why not stay in a hotel airport like:
