Hotel in Tuscany and itinerary help

I remember Rick Steves staying in a castle-like hotel in Tuscany. I can't find what is it! Any suggestions?
My itinerary so far for Tuscany:
09 July: Arrive to Tuscany from Munich, sleep in Lucca.
10 July: day trip to Vernazza and hike to Corniglia and return to Lucca, sleep in Lucca - maybe to wake up somewhere there and sleep in Lucca?
11 July: visit to Pisa, the tower and the cathedral, than go to Florence, sleep in Florence
12 July: visit Florence
13 July: visit Florence
14 July: depart Florence, visit San Gimignano and Siena. Sleep in Siena.
15 July: depart for Val d'Orcia, visit Montepulciano, sleep in Arezzo.
16 July: go to San Marino

Any suggestions? i am able to squeeze in a couple extra days extra. Are there any other pitoresque villages? Everything needs to be done by car, except day trip to Cinque terre where I can use the train.

Any help appreciated!

Try googling "castle hotels Tuscany" and look for images.

Casale Marittimo is less than an hour from Pisa. I found that there's not a heck of a lot to do in Pisa after you've seen the tower and cathedral so maybe you could combine Pisa & Casale Marittimo in one day. In Montepulciano we enjoyed the Contucci winery and visiting the shop of coppersmith Cesare Mazzetti, just down the street from the winery. He's a real gem!
