I feel like I'm searching for a unicorn. I will be traveling with my father and am looking for a centrally located hotel (near the Duomo) with twin beds that are not hard as a rock. Bonus points if it's quiet and if the beds that actually have space between them. Budget is around $200-250 for next October. (I am in the planning stage.)
You might be too early to book for next October.
Choose a few hotels and write them care of the concierge. Tell them about the kind of beds you want and tell them your father has a medical need for a soft mattress. See what kind of replies you get. We don’t want soft beds!

We stayed in Hotel Villani. It was 1 blk from the Duomo. The beds were comfy.
We recently stayed at Hotel Monna Lisa near the Duomo. My husband enjoys a softer bed and pillows. He was happy with the bed here. This hotel is a beautiful historic building with a quiet garden courtyard for relaxing. Not sure what their rates will be next year but we paid 819 euros for three nights including the VAT. This hotel is an oasis in a very busy Florence.

We stayed in Hotel Spadai. The breakfast was phenomenal, the location was excellent, and the beds were comfy. I'm not fond of hard beds. We could see the Duomo from the hotel window. We will book again for September 2024, but they have yet to post rates, and if you search, it seems they are sold out, which is not the case. It was a 10-minute walk to the train station, but I do not recommend it with luggage. The sidewalks get crowded, and there is a lot of traffic. The taxi ride was 12 euros.
