Booking.com has hundreds of houses in the center city. It's a relatively compact size city for walking. Or, go to the bookstore or library and get a travel guide on Italy.
I just spent a week at Hotel Nuovo Italia. It is five minutes from the S.M.N train station and ~8 mins. from the Duomo. The room is big, clean with a high ceiling and the AC is pretty good. There are a lot of restaurants and mini markets around the neighborhood but it is very quiet at night.
If you were hungry but do not feel like sitting at a restaurant, Mercanto Centrale is only a block away.
In 2016, I stayed at the Hotel degli Orafi which is almost next to the Uffizi. I had a wonderful stay there and would recommend it to other travelers.
We stayed at the Hotel California on an RS trip - perfect location. I could walk everywhere.

Look at a search engine like Trivago, then set the filters to select the type of amenities and price range you want. Check review on tripadvisor too. Anything within 1/2 mile from Piazza della Repubblica is centrally located inside the city center.
I'm staying in Florence next May as well.
I took Steve's advice and booked at his favorite Florence hotel, Hotel Loggiato Dei Serviti, on Piazza Annunziata.
Just a couple minutes walk from David. Seems like a cool location. 190 euros a night for non-refundable booking.
Hotel Perseo.
We enjoyed staying at Hotel Albani Firenze which is on a quiet side street 2 blocks from the train station. It is an easy walk to the Duomo, Uffizi, Ponte Vecchio bridge, and the Accademia. Ask for a room facing the courtyard with a balcony. The breakfast buffet was very good.
Tourist House Battistero.
50 meters to the Duomo. GOOD cold A/C for the hot Florence sunner temps.
VERY reasonably priced.
Stayed there in 2017. Paid same rate per night in August (65E for a double, two beds) as I did for another, less centrally located placed in Mar 2015.
I thought this value of this room was MUCH more.

I've spent days researching and reading reviews for places to stay in Florence for our trip next August.
Two that are highly rated and quite reasonable for August are iL Guelfo Bianco on via Camillo Cavour and a very highly rated
B & B, Relais Luce Florence close to the train station.
Another vote for Hotel California. Location is great and hotel is clean and neat and has a very nice staff.
Hard to recommend when I don't know whether you will find our choice, Hotel Dali, an unpretentious hostelry or an unmitigated dump -- we're OK with a small (but clean) shared bathroom, going out for coffee and rolls at a nearby cafe instead of elaborate breakfast buffet, good location down the street from the Duomo and a block away from a laundromat.
It is hard to say because your moderate & my moderate may be different but I just stayed at Grand Hotel Cavour, 13 minute walk from the train station and it was wonderful. I did not opt for breakfast, so can't speak to that. Some nice restaurants around the area. Highly recommend if it is in your price point.
Highly recommend Albero Bencidormi. Very reasonably priced small hotel with 7-8 rooms, all but one with ensuite bath. Cost per night less than $100 per night. Good sized rooms with really good AC. About 5 minutes from the SMN train station, 5 minutes from the Mercato Centrale, so very much centrally located The street is relatively quiet (via Faenza), and the hotel has a shared kitchenette to help defray cost. DH and I have stayed there three times in the past four years and would gladly stay again. Mr Roberto speaks excellent English and is extremely helpful with anything you need.
I've stayed at both the Il Guelfo Bianco and Loggiato dei Serviti, which has been recommended on this thread.
They're both worth considering.
Family of four, we stayed at the Dante States Apartments and were beyond impressed. Price was right at around 130 euro per night for plenty of room and centrally located. I would absolutely look here first when we return. We found it on booking.com.
My wife and I are traveling through Italy in Sept 2019 using trains and we have booked the Hotel Paris in Florence for three nights, it is located between the S.M. Novella train station and downtown Florence. The online reviews are very good.
Another vote for Hotel California. The location is great. Very quiet, but very close to everything.
We have stayed at Loggiato dei Serviti and it was fine. Last time we stayed in hotel orologio and we LOVED the location, especially if your traveling by train. Near the train station, but not that near to be noisy. The Piazza di Santa Maria Novella is beautiful. Walking distance from everything, but quiet enough to enjoy Florence.
