Steve,

I'd suggest using the extra time for Florence. Only spending a day trip there is just NOT enough time.

You might spend a few nights in Orvieto, and take a day trip to Civita di Bagnoregio. The transportation options are listed in Rick's book, and it's an easy trip.

Be sure to note the return times for the small shuttle Bus that runs from Bagnoregio to the base of the bridge at Civita, as they sometimes take a "siesta" in the afternoon. I got stuck in a torrential downpour waiting for the shuttle, but was fortunate that a kindly couple from Milano offered me a ride back to Orvieto (which I gladly accepted).

If you do decide to visit Civita, be sure to try the excellent food at Antico Forno.

Happy travels!

Two days in Florence is a minimum. After you've done that, a night in assisi, orvieto or civita would be great. We chose Orvieto because it was on the way to Rome and were very happy. Next trip I'll be sure to see Assisi and Civita.
