I really enjoyed my Assisi tour with Anne Robichaud in 2014. I took a 1/2 tour with her in Assis and a 1/2 tour through Spello, too. She is an American ex-pat who has lived in Italy for a long time. She is fun and shares a ton of great information.

We had a great tour of Volterra with Annie Adair a few years ago. It was very informative and worthwhile. I'm not sure if she only conducts tours in Volterra but there was a lot to see in Volterra & I was happy to have a guide for half a day.
Roberto Becchi, (ToursbyRoberto.com) is well regarded on this forum and Trip Advisor, and is recommended by Rick Steves. He is based near Sienna, and does tours all around the area including off the beaten path places, as well as Chianti. He has lived in the States and is married to an American, so his English is great. We had a really fun and informative day with him touring the Clay Hills, having lunch at a winery/organic farm and a monastery.
