My favorite refugio in the Dolomites is the Langkofel Hutte at the base of the Langkoffel Gruppe. It's old (1894) with thick stone walls, and views that go on forever! Great food and a very rugged setting. From there it is not a long walk (2 hours?) to the Platkofel Hutte. Spectacular views all the way. The Platkofel Hutte is newer but it's a great place to stop for lunch.
The hike around the Drei Zinnen is another stunning hike and there is a refugio there as well that you can use as a base.
That's a place to start at least! There are so many refugios in the Dolomites...it really depends on which part of the area you want to see that determines which ones you want to stay in. We tend to stay in huts, do day hikes, and then move to another location.
