Help with Italy Itinerary - driving Florence - Tuscany - FCO - 30 year anniversary!

Hi! My husband and I are traveling to Rome with our two adult kids in June - we will do quick tour of Rome and then headed to Sardinia for a 7 day Moorings sailing trip (we skipper ourselves and have done this in northern and southern Croatia, Greece, BVIS). We get off the boat and send our kids back to USA.

Here is where I would love help! We will stay another 6 days in Italy and would like to go to see Venice and Florence. Our tentative itinerary is as follows (I have not booked anything):

Sunday - Train from Rome to Venice early in the morning. Stay in Venice two nights and see all the sights.

Tuesday - Train from Venice to Florence and spend 3 nights here. We could also stay two nights and rent a car a day earlier. We don't need to see every single museum.

Friday - Rent a Car in Florence to drive to Tuscany. See the Tuscan countryside - stay the night in Orvieto or Siena or Assisi - drive back to FCO drop off car and fly home. Our flight is at 14:20.

We love road trips and have driven all over France, HW1 in California, many National Parks in the USA. We love to see the countryside and are not worried about experiencing each village. We will come back again when we have more time.

We would love recommendations on which towns to travel to and where to spend the night.

Since we have sailed in Croatia and Greece, we are used to seeing small towns/villages for a day and heading to the next one. We love road trips as much as we love being on the ocean.
We know we will need to leave early Saturday morning to drop off the car at FCO by 12:00. (We are also open to driving along the coast!)

Would add one more night to Venice.
You plan to see Tuscany in one day?? Not the least bit possible. A week minimum.

With just 6 nights you have time for Florence and Tuscany
Or
Venice and Florence
But not all 3

Renting a car for just one night not worth the trouble
