HELP with 10-day Italy trip

I'm looking for some help planning a 10-day Italy itinerary for 3 adults (10 days includes travel days). This would be all of our first times in Italy, so I'm LOST on what to do!

Our thought was we would land in Rome on June 24th (hopefully early morning) and board a plane from Rome on July 3rd. As we were looking, it seemed like Rome would be the cheapest flights. However, we’re up to different options. We will have around a 9 hour flight.

We aren't very into museums/art, but would like to see things like the Colosseum, Trevi Fountain, Vatican city, etc. VERY into food/drinks (we definitely want to do a pasta making class). We honestly enjoy walking around and going into various shops. We could do a beach day, but not necessary.

My first itinerary was:

June 24th: Arrive in Rome; see Colosseum and Trevi Fountain

June 25th: Rome - Vatican City

June 26th: Leave for Amalfi Coast

June 27th: Amalfi Coast

June 28th: Amalfi Coast

June 29th: Amalfi Coast

June 30th: Sorrento (go see Pompei)

July 1st: Sorrento (day trip to Capri)

July 2nd: Sorrento during the AM → train to Rome at night

July 3rd: Fly home

However, I am now contemplating whether it would be better to go a completely different route and see places such as Florence/Tuscany, Cinque Terre, Venice (not all of these in 1 trip).

Any help with either itineraries would be greatly appreciated! Open to any and all ideas. THANK YOU!

I would not plan to do much on your arrival day - jet lag is murder and Rome is a big, busy city that easily overwhelms even when you're fully rested. Give yourself a bit of grace and at least one more day in Rome to do it justice. Also factor in losing about a half day to travel every time you change locations.

As for what to pick, that is entirely up to your group and your stated interests. You can't see everything in Italy in 10 days. You can't go wrong with selecting any of your stated options but you can bite off too much. Better to savor than sprint.
