From what we understand, we just bought vouchers that must be exchanged at 5:00 pm on the day of event at the ticket office for actual tickets.
Could an opera sell out there? Will we end up with only vouchers and no opera?
TIA!

Have you already purchased from Get Your Guide? It's a 3rd party reseller. You can buy directly from the Verona Arena website.
If you've already purchased then perhaps you can go into the calendar on the official website and see what the ticket situation looks like on your date.
Viator and Get Your Guide are sometimes good websites to look for events but it's usually better to purchase directly from the venue so you are not putting a middleman who is charging someone (either you or the venue) to make their profit.
Are you able to cancel those? Yes, you want to purchase directly from the site Pam mentioned. When I purchased them a few years ago, I could pick my seat. Some of them they recommended that you buy, rent, or bring a cushion because you’re sitting on a stone ledge seat.
It’s a beautiful experience! It does get a little cooler at night, so I carried a sweater. If you want, the cafes along Piazza Bra are open afterwards. I just walked back to my nearby room at Hotel Bologna.
Thank you!
Will do!
